Cheesy Pasta Bake

So there I was on a Friday morning, trying to work out what to make for lunch. I have certain go-to recipes that work for chicken breasts. Dredge in egg and breadcrumbs. Fry. Cover in marinara sauce. Throw cheddar on top. Serve

Boring.

But if you saw my previous post on Tuscan-Style Chicken then you know I had certain ingredients already in the “pantry” – heavy cream, spinach, red bell peppers, etc.

So that’s when random turning of recipe book pages landed on the perfect recipe!

Cheesy Pasta Bake with Chicken and Bacon

Ingredients

  • 200g pasta shapes, e.g. rigatoni
  • 1 tbsp oil
  • 3 small chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 1 red/yellow bell pepper, chopped
  • salt and pepper
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 x 400g canned chopped tomatoes
  • 60 ml heavy cream
  • 50g chopped spinach
  • 3-4 rashers of bacon, chopped
  • 50g cheddar, grated
  • 50g mozzarella, grated

Instructions

Preheat the oven to 190°C

Add the pasta to a saucepan of salted, boiling water. Cook until almost ready, then drain

Fry the chopped bacon until well done.

While the pasta is cooking, heat the oil in the frying pan and fry the chicken cubes until sealed and slightly browned

Add the onion and cook over medium heat until softened

Add the peppers, salt, pepper, tomato paste, spices and garlic. Stir and cook 2 minutes

Stir in the chopped tomatoes and cream, bring to a bubble and then add the pasta and spinach and cooked bacon

Stir everything together and place in a large ovenproof dish

Top with the cheddar and mozzarella and bake uncovered for 20-25 minutes
